Simple Herby Mashed Potato Burgers

Whether you are catering for vegetarians or you happen to have leftover mashed potato, the following recipe is really flavorful. If you have a lot of leftover mashed potato, you can make more burgers, using one egg for each cupful of mashed potatoes. The fresh parsley is great but use dried parsley if you do not have it. Also, you can add other cooked vegetables, such as diced carrot, finely chopped broccoli or whatever you have leftover from the night before. These delicious mashed potato burgers are a wonderful way of turning leftovers into a tasty meal. They take just a few minutes to make and, like many other easy burger recipes, you will adore the taste. Serve these with salad or in hamburger buns.

Leftover Mashed Potato Burgers

Ingredients -

3 cups leftover mashed potato
3 beaten eggs
½ cup grated onion
½ teaspoon nutmeg
½ teaspoon salt
¼ teaspoon black pepper
1 tablespoon chopped fresh parsley
2 tablespoons butter Flour

Preparation:

Melt the butter in a skillet.

Combine the mashed potatoes, eggs, onion, nutmeg, salt, pepper, and parsley.

Form potato patties out of the potato mixture, adding some flour if it is too sticky.

Brown both sides of the potato patties.

They are done when they are hot all the way through and golden brown on the outsides.
